To make the trunk stand up, I threaded the tail left after casting off onto a needle and then threaded the needle back down through the trunk and pulled it out the other end of the elephant. Then I pulled it tightly and tied it to the other tail (left from casting on) and knotted the two together several times to form the tail and secure the trunk.

Wrapped the elephant in bubble wrap, put it in a good sized box with paper stuffed in to keep it from shifting around and then wrapped the box in tinfoil. Awesome.

Followed lnore01’s ear instructions but cast them on separately and then sewed them on to the body.
