Done! While this was somewhat tedious towards the end, I’m quite pleased with how it turned out. Instead of using a larger knitting needle, I used a size K crochet hook to bind-off. I also added 30 sts in the middle to make it larger (more closely matched the proper gauge).
I began by swatching and the picture is a mini Jazz made with fingering weight to see if it would turn out okay. I like it so I’m going to continue.
